Golden mashed potato balls with a molten cheese centre and a luxurious truffle aroma. A light spray of Spritz Truffle gives them that gourmet finish without deep-frying.

Ingredients

  • Spritz Truffle cooking spray
  • 500 g potatoes, boiled and mashed
  • 100 g mozzarella, cut into small cubes
  • 1 egg
  • 60 g flour
  • 80 g breadcrumbs
  • 30 g grated parmesan
  • Salt and black pepper to taste

Method

  1. Mix the mashed potatoes with the parmesan, salt, and pepper until smooth.
  2. Take a spoonful of mash, press a cube of mozzarella into the centre, and roll into a ball, sealing the cheese inside.
  3. Roll each ball in flour, dip in the beaten egg, then coat well in breadcrumbs.
  4. Place the balls in the air-fryer basket and give them one even spray of Spritz Truffle.
  5. Cook at 190 C for 12 to 15 minutes, turning halfway and giving a second light spray of Spritz Truffle for an even golden crust.
  6. Let them rest 2 minutes so the cheese sets slightly, then serve warm.
