A protein-packed vegan scramble that tastes just like scrambled eggs, ready in minutes. One light spray of Spritz Olive cooks the tofu beautifully without any added oil.

Ingredients
- Spritz Olive cooking spray
- 300 g firm tofu, drained
- 1/2 teaspoon turmeric
- 1/2 teaspoon ground cumin
- 1 small onion, finely chopped
- 1 tomato, diced
- 2 tablespoons nutritional yeast
- Salt and black pepper to taste
Method
- Press the tofu to remove excess water, then crumble it with your hands into small pieces.
- Spray a pan with one light spray of Spritz Olive and cook the onion over medium heat for 2 minutes.
- Add the crumbled tofu, turmeric, and cumin, and stir for 3 minutes until the tofu turns golden.
- Stir in the diced tomato and cook for another 2 minutes.
- Add the nutritional yeast, salt, and pepper, and mix well.
- Give a final light spray of Spritz Olive for shine, then serve hot with toast.
