An easy breakfast quiche that uses a tortilla as the crust, filled with eggs, cheese, and veggies. One light spray of Spritz Original keeps the tortilla crisp and stops it sticking.

Ingredients
- Spritz Original cooking spray
- 1 large tortilla
- 4 eggs
- 60 ml milk
- 60 g grated cheddar
- 1 small tomato, diced
- 2 tablespoons chopped spring onion
- Salt and black pepper to taste
Method
- Heat the oven to 180 C and give an oven-proof dish one light spray of Spritz Original.
- Press the tortilla into the dish to form a crust, and give it a quick spray of Spritz Original so it crisps up.
- Whisk together the eggs, milk, salt, and pepper.
- Scatter the tomato, spring onion, and half the cheese over the tortilla, then pour in the egg mixture.
- Top with the rest of the cheese and bake for 18 to 20 minutes until set and golden.
- Let it cool for 5 minutes, then slice and serve.
